Stuffed eggplant parmigiana with herb gremolata crumb (GF) (V)


This is a vegetarian dish everyone must try! Eggplant halves are filled with roma tomatoes, eggplant, capers, chilli and garlic then oven roasted and topped with fresh mozzarella and crunchy gremolata breadcrumbs. Served with a creamy garlic hummus and sauteed mushrooms.
