Caramelised coconut cake with peach & raspberry (GF)


This cake has gained rock star popularity over the years and is certainly the all-time favouite of most that have tried it including me!
Layers of light mascarpone cream, raspberry compote and peach are sandwiched in-between crunchy yet chewy coconut and almond sponge finished with a sprinkling of wafer thin caramelized sugar.
